Oil temp higher then usually, with fan speed increase ?

Hello,

I've a E92 2007 325i (N52 engine) with gauge temp in cluster,
since the day i've Purchased the vehicule (3 years ago), the temp oil stay always on 90C (194 F) while i'm in town, up to 110C (230 F) on highway,
and that ALL the time (winter, summer ...)

last week i've done an normal oil change with change of oil filter and air filter..
2 or 3 days after that the oil gauge stay now on 110C (230 F) (in normal driving in town, not tested yet on highway)
and more unsuel : i've notice that the fan speed have increased ....

any ideas ?

PS : have changed water pump & thermosat 6 month ago..
PS2 : I've a scan cable : no ODB error
