List some of the ways you all have reduced weight

For example, wheels, CF hood, CF trunk etc.

Looking to snap up an E36 for tracking- looking for ways to lose significant weight, while keeping the overall functionality, aesthetics, and safety parameters intact.

I stopped ordering dessert!

Outside the obvious CF replacement parts, you can remove major amounts of sound deadening. But if you you really want to lose weight on a track car, lose all the furniture save for a racing seat. You can't really preserve aesthetics if you want a real track car. Then once you commit to full track, lose things like PS, AC, heater core, power windows, major amounts of unneeded wiring and modules.

None...I mean I guess resonator delete and a lighter muffler. KW's are probably lighter than OEM xi suspension. I'm not sure about my wheels but surely they're heavier since style 158 were known for being light weight (while ugly).

Aiming for an M3 coupe, you got it brother. Sedan would work too, but I would also like to keep it as a DD, but this of course may be impractical. This is coming from a guy who bought a convertible for a DD

Have you considered asking ACM about their advice on making a track car for you? All you really need is a shell of a car, acid dip it to remove all the junk, light coating of paint (because paint is heavy). Have a roll cage installed, and a small fuel cell. Put back the motor and basic functional parts. Buy most of the Race parts which should be lighter weight and you are good to go. No AC, No PS, No PW, No Power Seats, No power nothing. Change the glass for plastic (because glass is heavy).

No one daily drives a track car, most are not street legal. Just park it in your drive way for the winter on jack stands and with no fuel. Come spring you can tow it to your local track for fun. you can rent a truck and trailer to haul the car. I have a truck and can help you haul it around if you like as well.
