do we have a stock 6/4 piston setup? what are the sizes on the rotors?

Single piston floating calipers ( as does the new M3, M5 has dual pistons )

Disks:
Front 348mm x 30mm
Rear 336mm x 22mm

No, sizes are similar to the 545i brakes, but the hubs are very different

how are floating calipers different from true 6/4 piston calipers? ours is really single piston front and rear?

Yes, single piston, as are almost all BMW brakes. Only M5/M6 have two pistons up front.

Difference is it only has 1 piston, and it "pulls" the opposite side brake pad towards the brake disk when it engages.
The caliper "floats" / moves inwards when the brake is applied

On 6 piston calipers, there are 3 pistons on each side, and the caliper doesnt move
