Erratic Coolant Temperature?

I have a P3 gauge and am able to see my coolant temps digitally. My temps normally hover from cold to around 215-230 when fully warmed up here in Florida. Today I noticed my temps would drop HARD from fully warm to around 175-190 and jump around quite a bit based on my driving. This is something I have never seen before and I am worried. No CEL or symptoms but I have never had seen this fluctuation in the 5 months I have had my P3 gauge installed

Doubt the coolant temp is actually jumping around. Might have a loose wire.

But the chance of this fluctuating that much only noticing right after customrom flashing?
