E85 or mix? Transmission good for what tq?

Hi I am looking to get into a BMW M5 2018 and above. I have two questions

1. keeping everything stock and getting a custom tune, which is more recommended full E85 or Ex (where x is between 10 and 85)

2. what torque level is stock transmission good for

I'm not sure whom tunes high ethanol files for stock hardware but I'd be interested as well. Would love to run straight E85 (E75) at the pump and call it a day. Not sure if the stock fuel system can handle it or not.

This! I noticed just 2 gallons of E85 made a difference even in stock tune.
