I am super concerned about the matte maintanence issues. I am not opposed to putting a protective film on the car, and I do think the green fits the car better than the BHG due to the bronze trim… never owned a matte car before.
Also I am in FL, and have been told matte cars get VERY HOT in the sun.

Please advise.
You shouldn't be worried.

I have a Frozen Arctic Grey M5 since 2018 and everything is fine.
Of course I have a few rock chips but I would also get those with a non matte paint.

Check out my pictures, you'll see how a matte car looks like after 3 years.
The ceramic coating definitely helps to get it clean.

Green with red calipers seems to work best. Green and red go amazingly well together, plus all the other red accents inside and out seem to be make for a more cohesive build.

However, for some odd reason, I like the gold calipers more in all the videos. Just hard to tell for sure. I'm really worried about the gold calipers and the bronze wheels clashing. Wish they simply offered black calipers to make life easier.

My build is Frozen Green with red calipers. I thought the gold would get lost behind the wheels. If the wheels were black, I would have had a more difficult decision on the calipers.

Unfortunately it will stay this color throughout the build. Technically the Green is a Special Order color and this is how mine looked on my Fire Orange M5C the whole build. I expect it to be the same for the Frozen Green.

I care more for the car being the actual color in the dash and on the Multimedia screen. I wish BMW did this kind of attention to detail but unfortunately they don't.
