Engine Oil Temperature Fluctuations

Anyone have any thoughts or experiences with this?....as a preface I live in Scottsdale, AZ where it's getting a lot hotter and consistently being in the 100s deg.

So a couple days ago I noticed that while driving the engine oil temperature would go midway to the typical 210 deg F or so....but it started dropping to about 180 deg f and then went back up to 210 deg.

Yesterday in the evening I started the car and it went up to the normal 210 deg F midpoint of the gauge, but then again started dropping to about 180-185 deg and then began moving back up to the normal 210 deg midpoint and stayed there - total drive was about 25 min.

Is this normal to see these temperature gauge fluctuations? Is it the hotter weather that's causing extra cooling fans to kick in or something? Is it because I'm getting close to an oil change or oil level is getting lower? Something else?

Here's a picture of when it dropped to that 180 deg range before it started moving back up to the normal 210 deg midpoint within the gauge where it stayed for the remainder of the drive.

I think it's normal.... I hardly pay attention to the guage that closely. I would be worried if temperature constantly ran high above normal range, dropping in temp isn't a concern as far as I know
