Probably had her tips added in to gross, then taxes deducted. Since she already had the tips in cash, they would be deducted after the tax calculation. The effect is to remove the withholding taxes on her tips from her other compensation (min wage for servers, most likely). This is how the employer is supposed to tax tips, and it also is why tip earners under-report tips if they can.
