The backs of the new M3 carbon paddles are rubber (by design). If you want the best feel in the hand, get metal paddles. Also most aftermarket designs are still larger than the new BMW carbon paddles.
The new M3 paddles are not rubber on the back, contrary to what they look like. They are indeed plastic.
