You've got no radio, no distractions, just three people hyper focused on the task at hand. A daily commute involves more distracted driving. Assuming you don't act like a complete idiot and keep your passing speed differential reasonable there's minimal chance that a random person will freak out and do something unexpected.
The videos are misleading... those are shot from spotter cars that are actually talking to the Cannonball drivers and have advance warning of the pass. Most that I am familiar with slow down a LOT for general passing in order to do so safely, they hit max speed on open roadways.
That's why Arne Toman said the AMG would have done even better on the COVID run, it could accelerate faster to top speed after slowing to safely pass people compared to the Audi Interceptor.
