As for leather, I like Leatherique. Works very well, and the leather ends up matte rather than shiny.
Oh, and definitely do yourself a favor and pick up a Porter Cable 7424 Random Orbital Buffer. I can wash, clay, and seal my car in about an hour with the buffer.
