Want to turn off the EDC function itself.

It doesn't really work that way. The DDC function is not just the adjustability via the button, it's the continuous realtime adjustment based on road conditions. If you turn off EDC control, the shocks will either go into a fail safe mode that's design purely to get you to the dealership safely, or default to full soft or full stiff. Full still might sound good, but that level of damping is only intended for very short bursts to control potholes or large swells. The dampers are not designed to run at full stiff for an extended period, and they are not tuned with this in mind.
Using the adaptive struts without the adaptive function is not feasible or desirable.
