1. In my car the speedo is a bit optimistic, at 104kmh indicated you are only travelling at 100kmh.

275/35r20 is definitely an option as well and it will make the speedo about 1kmh closer to real speed, obviously 285/35r20 is about 2kmh closer. I'd still actully be slightly under but more accurate than stock.

2. The edge of the wheel, yes. But remember I've got a 30mm wider tyre on there at the moment. So with the same offset it would be 15mm extra on either side but as the offset is 34mm instead of 31mm, I'm 18mm extra on the inside and 12mm extra on the outside.

3. 325/25r21, not 325/35r21. With 275/35r20 and 325/25r21 the rear is 0.7% shorter than the front with an outer diameter of 700mm and 695mm. 285/35r20 is going to look a bit too tall I think as it will be 708mm outer diameter. Note that the stock setup is 694mm and 686mm which isn't really perceptible but I think that 708mm and 695mm will be, especially with the shorter sidewall at the rear.
