The 51mm offset will fit within rolled fenders fine with a 285 tire. With that offset, though, I'd be concerned about getting close to or rubbing the inside.
If you're interested in launching, you should be more concerned about sidewall rather than tire width. My buddy's 1k rwhp '69 camaro hooks on 275's with a 15x10 wheel.
